🧾 Ingredients (Serves 4–5)
- 3 cups potatoes (boiled, cubed & cooled)
- 1 cup sweet corn (boiled or grilled)
- ¼ cup red onion, finely chopped
- ¼ cup cucumber, diced
- 2 tbsp fresh parsley or dill, chopped

- Boil potatoes until fork-tender, then cool completely.
- In a large bowl, combine potatoes, corn, onion, cucumber, and herbs.
- In a small bowl, whisk all dressing ingredients until smooth.
- Pour dressing over salad and gently mix.
