Instructions
1. Roast the Carrots
- Preheat oven to 400°F (200°C).
- Toss carrots with olive oil, honey, salt, pepper, and thyme.
- Roast for 20–25 minutes until tender and caramelized.

2. Prepare the Tart Shells
- Roll out puff pastry and cut into circles to fit tart pans or muffin tins.
- Press pastry into molds and prick bottoms with a fork.
- Pre-bake at 375°F (190°C) for 10 minutes until lightly golden.
3. Assemble
- Fill each tart shell with roasted carrots.
- Sprinkle walnuts evenly.
- Add generous crumbles of goat cheese.
4. Final Bake
- Bake at 375°F (190°C) for 10–15 minutes until pastry is crisp and cheese slightly softened.
5. Finish
- Drizzle with olive oil or balsamic glaze.
- Garnish with fresh thyme.
- Serve warm or at room temperature.
