Ingredients (12–15 crisps)
- 1 cup feta cheese, crumbled (sheep or sheep-goat mix is best)
- ½ cup mozzarella, finely shredded (for binding)
- ½ cup spinach, very finely chopped (fresh, well-dried)
- 1 tbsp olive oil
- ½ tsp dried oregano
- ¼ tsp garlic powder
- ¼ tsp black pepper
- Optional: pinch chili flakes or za’atar

Step-by-Step Instructions
1️⃣ Prep
- Preheat oven to 190°C / 375°F
- Line baking sheet with parchment paper
2️⃣ Prep the Spinach (Very Important)
- Finely chop spinach
- Squeeze all moisture out using hands or cloth
(Moisture = soft crisps)
3️⃣ Mix
In a bowl, combine:
- Feta
- Mozzarella
- Spinach
- Olive oil
- Oregano
- Garlic powder
- Pepper
Mix gently—do not mash feta completely.
4️⃣ Shape
- Scoop 1 heaped tablespoon per crisp
- Place on tray, spaced apart
- Flatten slightly (thin = crispier)
5️⃣ Bake
- Bake 12–15 minutes until:
- Edges are deep golden
- Centers are bubbling
6️⃣ Cool = Crisp
- Let cool 10 minutes on tray
(They harden as they cool)
