  • 4 medium zucchini, sliced into rounds or half-moons

  • ¼ cup grated Parmesan cheese

Step 1: Prep the Zucchini

  1. Preheat oven to 190°C / 375°F.
  2. Lightly salt zucchini slices and let sit 10 minutes.
  3. Pat dry with paper towels to remove excess moisture.

Step 2: Sauté

  1. Heat olive oil in a pan over medium heat.
  2. Sauté onion until soft (3–4 minutes).
  3. Add garlic and cook 30 seconds.
  4. Toss in zucchini and cook 3–5 minutes until just tender.

Step 3: Make the Cheese Mixture

  1. In a bowl, whisk sour cream and egg.
  2. Stir in mozzarella, cheddar, Parmesan, salt, pepper, oregano, and paprika.

Step 4: Assemble

  1. Fold cooked zucchini mixture into the cheese mixture.
  2. Spread evenly into a greased baking dish.
  3. Add breadcrumb topping if using.

Step 5: Bake

  • Bake uncovered for 30–35 minutes, until golden and bubbly.
  • Let rest 5–10 minutes before serving.
