Instructions
- Crisp the Tortillas
- Heat ~½ inch oil in a pan over medium heat. Fry tortillas one at a time until golden and crisp (about 30–40 sec per side).
- Drain on paper towels.
Oven option: Brush lightly with oil and bake at 200°C / 400°F for 6–8 min per side until crisp.
- Cook the Beef
- Brown beef in a skillet. Drain fat.
- Add taco seasoning + water per packet directions. Simmer until thick.
- Warm the Beans
- Heat refried beans in a small pan or microwave until spreadable.
- Assemble (2 Layers)
- Place one crispy tortilla on a baking tray.
- Spread beans, then seasoned beef.
- Top with a second tortilla.
- Spread enchilada sauce over the top tortilla.
- Sprinkle generously with cheese.
- Bake
- Bake at 190°C / 375°F for 8–10 minutes, until cheese is melted and bubbly.

- Add tomatoes, olives, and green onions.
- Slice into quarters and serve hot.
