Crispy, cheesy, saucy — just like the classic!


 Ingredients (Serves 2–3)

For the Crispy Shells

  • 4 small flour tortillas
  • Neutral oil (for frying or brushing if baking)

For the Filling

  • 225 g (½ lb) ground beef
  • 1 packet taco seasoning (or homemade)
  • ½ cup refried beans (pinto or black)

For the Sauce

  • ½ cup enchilada sauce (mild or medium)
  • 2 Tbsp tomato sauce (optional, for closer copycat flavor)

For the Toppings

  • 1½ cups shredded Mexican-blend cheese (cheddar + mozzarella/Monterey Jack)
  • ¼ cup diced tomatoes
  • 2 Tbsp sliced black olives
  • 2 Tbsp sliced green onions

 Instructions

  1. Crisp the Tortillas
    • Heat ~½ inch oil in a pan over medium heat. Fry tortillas one at a time until golden and crisp (about 30–40 sec per side).
    • Drain on paper towels.
      Oven option: Brush lightly with oil and bake at 200°C / 400°F for 6–8 min per side until crisp.
  2. Cook the Beef
    • Brown beef in a skillet. Drain fat.
    • Add taco seasoning + water per packet directions. Simmer until thick.
  3. Warm the Beans
    • Heat refried beans in a small pan or microwave until spreadable.
  4. Assemble (2 Layers)
    • Place one crispy tortilla on a baking tray.
    • Spread beans, then seasoned beef.
    • Top with a second tortilla.
    • Spread enchilada sauce over the top tortilla.
    • Sprinkle generously with cheese.
  5. Bake
    • Bake at 190°C / 375°F for 8–10 minutes, until cheese is melted and bubbly.
  6. Finish
    • Add tomatoes, olives, and green onions.
    • Slice into quarters and serve hot.
