Whisk together:
- 2 cups beef broth
- 1 cup heavy cream (or half-and-half)
- ½ cup milk
- 1 tbsp tomato paste
- 1 tsp Dijon mustard (optional but 🔥)

- ¼ tsp black pepper

- 1½ cups shredded cheddar or mozzarella

- Brown the beef
Heat olive oil in a Dutch oven over medium heat.
Add onion → cook 2–3 min.
Add beef, garlic, salt, pepper, paprika, Italian seasoning.
Cook until beef is browned. Do not drain. - Add pasta
Stir in uncooked pasta shells directly into the beef. - Pour the creamy liquid
Pour the whisked creamy mixture over everything.
Stir once so pasta is mostly submerged. - Cook
Bring to a gentle boil → cover → reduce to low.
Simmer 18–22 minutes, stirring once halfway, until pasta is tender and sauce thickens. - Cheese it up
Sprinkle cheeses on top.
Cover 3–5 minutes until melted. - Rest & serve
Let sit 5 minutes (it thickens more). Garnish and serve.
