Ingredients (All Zero-Point Friendly)
- 2 cups cooked chicken breast, shredded or finely diced
(poached, baked, air-fried, or rotisserie skin removed) - ¾ cup fat-free Greek yogurt (plain, unsweetened)
- 1 tsp Dijon mustard (optional but highly recommended)
- 1 tsp lemon juice or apple cider vinegar
- ½ cup celery, finely chopped
- ¼ cup red onion, very finely diced (or scallions)
- 1–2 tbsp fresh parsley or dill, chopped
- ½ tsp garlic powder

Instructions
- Prepare the chicken
- If cooking fresh: poach chicken breasts in lightly salted water for 15–18 minutes until just cooked. Cool, then shred or dice finely.
- Make the creamy base
- In a large bowl, whisk together Greek yogurt, Dijon mustard, and lemon juice until smooth.
- Add crunch & flavor
- Stir in celery, red onion, herbs, garlic powder, onion powder, salt, and pepper.
- Combine
- Fold in the chicken until evenly coated and creamy.
- Chill (optional but amazing)
- Refrigerate for 20–30 minutes to let flavors blend.
