Ingredients:
For chicken:
- 2 chicken breasts (cubed or sliced)
- 2 tbsp olive oil
- 2 garlic cloves (minced)
- 1 tsp paprika
- 1 tsp oregano
- ½ tsp cumin
- Salt & black pepper
- 1 tbsp lemon juice
For bowl:
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes (halved)
- 1 cucumber (chopped)
- ¼ red onion (sliced)
- ½ cup olives
- ½ cup feta cheese (crumbled)
For dressing:

- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt & pepper
Instructions:
- Cook chicken: Toss chicken with olive oil, garlic, spices & lemon juice. Cook in a pan 6–8 mins until golden and cooked through.
- Prepare base: Add rice or quinoa to a bowl.
- Assemble: Top with chicken, tomatoes, cucumber, onion, olives & feta.
- Dressing: Whisk dressing ingredients and drizzle over the bowl.
- Serve: Mix and enjoy fresh!
